Happy Mom Monday to my beautiful friends! I hope you guys have an amazing start to your week! I know as busy parents sometimes we just want a quick meal that is not only delicious, but quick to make as well. So, I thought for today’s post that I would share a yummy recipe that is easy to make and not super involved. Pretty much everyone who knows me well enough knows that I live for a good salad. When I was younger, I hated salads. What the heck was wrong with me? Now I love them, and I could literally eat a huge, yummy salad multiple times a week! Let’s jump into the recipe!
Step 1: Pre-heat the oven to 450.
Step 2: While the oven is pre-heating, I start to clean and season the chicken breasts. I put them in a glass baking dish and season them with olive oil, paprika, garlic powder, oregano, salt, and pepper. I do not use any specific measurements for these and I just season both sides until they are covered and then bake the chicken for around 30 minutes or until chicken is not pink. This is the best chicken. Don’t ask me why because it is so simple to make, but it is so delicious!

Step 3: If you have not put Mexican street corn on a salad yet, you are missing out! This pack that I buy is corn with olive oil, parmesan, lime, and cilantro. I usually start the chicken first and then throw the corn on a baking pan and bake for around 20 minutes or less. This is so delicious and if you love cobb salads, they are a great addition for some veggies to mix in.

Step 4: I always use spinach for my salads, but you can use whatever type of lettuce base you would like! I get that prepped and ready to go on my plate.
Step 5: Once chicken is done cooking, cut the chicken breasts into pieces and disperse on top of the lettuce. Add your Mexican street corn on top also.
Step 6: Now is the fun part and that is adding whatever other toppings you like. Some of my favorites are pepper jack cheese, blue cheese crumbles, avocados, hard boiled eggs, croutons, carrots, chopped up pieces of bacon, and dressing. You can get as creative as you want with your toppings, but I love mixing different combos each time I do this to spice up the taste!
