Shredded Chicken Tostada Recipe

Hello everyone! I hope you all had a wonderful Easter celebration, even though I am sure it looked very different for most people this year. Regardless of the situation, God is still good, He conquered death and He is risen! Today I am back with another recipe that my husband and I have made up and it is probably one of our favorites! This one is definitely a must try and it fairly easy to make. As always, if you end up trying this, leave a comment below to let us know what you think!

Today we are making shredded chicken tostadas. The first step in this process is to clean your chicken breasts and boil them for about 45 minutes to an hour and season the water with salt and pepper. After the chicken is thoroughly cooked, now it is time to shred that chicken up. A little hack that we learned from someone that makes shredding chicken so easy is to put the chicken in a bowl and use an electric mixer to shred it. It literally takes a couple of minutes and it comes out perfectly shredded.

After the chicken is shredded, in the same bowl you will want to season the chicken with Adobo (or any seasoning you have), seasoned salt, lime juice, and cilantro. Then use the electric mixer again to make sure the seasoning is mixed evenly through the chicken. Do a quick taste test to make sure it is to your liking.

While the chicken is cooking you will want to start prepping whatever veggies you would like to use. We use peppers, onions, and black beans. I fry the peppers and onions in a pan with oil and I start them while the chicken is cooking because I like them to be a little charred and more crispy. I also just heat up the beans in a pan with oil for around 8 minutes.

Another thing that we like to add to the top is guacamole. You can either buy this already made from the store or you could make your own. The way we make ours is with two avocados and a McCormick seasoning packet and just mash everything together. It is so easy and it is actually really delicious.

Once you have all of your ingredients ready to go, it is time to assemble everything together. We usually buy the ready to go tostada shells to save some time but if you want to make your own— go for it! Start by placing the shredded chicken mixture on top of the shell and start to add your veggie mixture (peppers, onion, and beans) on top of that.

The next step would be to get creative and add whatever topping sound yummy to you. We usually top with guacamole, shredded cheese, hot sauce, sour cream, and cilantro.
